We use Ginoza-grown foodstuffs—vegetables grown with only organic fertilizer, Benibuta pork, Japanese tiger prawn, umibudō (sea grapes), and seafood taken from the waters visible as you approach—that were painstakingly nurtured by their producers. Our carefully selected, Yanbaru-raised meats—Ginoza-raised Benibuta pork, Yanbaru Shimabuta Agu pork, Yanbaru-raised Japanese beef and Yanbaru spring chicken—grilled with Binchōtan charcoal are perfection.
